What is Cassava?
Cassava has a reputation for being one of the world’s most nutritious and highly wielded super foods. It is the third most source of calories in the tropics after rice and maize. It is considered a healthy food in that it is rich in starch and contains significant amounts of calcium, dietary fibre, magnesium, phosphorous, potassium, Vitamin B6 and Vitamin C. From studies it has been shown that cassava can significantly decrease cholesterol levels, decrease low density lipoprotein (LDL) and may help lower triglyceride levels due to its high dietary fibre content.
